Pinto Refried Beans

Ingredients:

  • 1 small eggplant, cubed
  • 1 red onion, diced
  • 1 roma tomato, diced
  • 1 Jalapeno, diced (remove the seeds for less spice)
  • 1 large clove of garlic, minced
  • 1 tsp chipotle powder
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 2 tbsp coconut oil
  • 1/4 cup bone broth

Directions:

  1. Cook onions in oil.
  2. Cook garlic.
  3. Add the tomato and cook until soft.
  4. Add the eggplant and bone broth.
  5. Add jalapeño and spices.
  6. Puree.
